Hawaiian Pork Quesadilla

Ingredients

  • 10 soft tortillas, fajita size
  • 1 1/2 cup pulled pork
  • 1 1/4 cup Monterey Jack cheese
  • 3/4 cup pineapple juice
  • 1/2 cup teriyaki sauce
  • 1/4 cup brown sugar
  • 1/2 tsp ginger
  • 1/2 tsp chili oil
  • 1 TBSP butter

Instructions

  1. First, bring three quarter cup pineapple juice, one-half teriyaki sauce, one-quarter cup brown sugar, one-half teaspoon chili oil, and one-half teaspoon ginger to a low simmer.

  2. Bring the mixture to a low boil and simmer on low heat for 20 minutes.

  3. Then, add in one and one-half cup pulled or shredded pork and remove from heat. The sauce mixture should be thick-ish.

  4. Next, in a hot skillet, melt one-half tablespoon butter and add one tortilla to the skillet. Then top with one-quarter cup Monterey jack cheese and one-quarter cup pineapple pork mixture. Then top with another tortilla.

  5. Brown one side of the quesadilla, then flip and brown the other side of the quesadilla. Repeat with another quesadilla, the melt the remaining half tablespoon butter. Then continue cooking the remaining tortillas.
